There's an awesome new BBQ joint opening up near Frisco...Hard Eight BBQ!
 
At Hard Eight, you won’t see a hostess at the entrance, nor will you have a waiter. You will be served right from the person who has prepared your food. Their pit masters serve you fresh, hot food, right from the pit. And, you are served fast.
 
Hard Eight BBQ is a one-of-a-kind eating experience. The rustic atmosphere, authentic food and unique cooking and serving approach are aspects their fans have fallen in love with. Hard Eight BBQ is known for much more than just BBQ. Other favorites include the 2” pork chop, hand cut 16 oz. ribeye served with onions, and their famous prime rib, cut to order.
 
The Hard Eight family enjoys sharing what they love; a fun atmosphere, delicious food and friendly, “Texas style” service. Preparing delicious meals for families dining in, or for those who wish to take their food “on the go”, is also something they take pride in. All Hard Eight restaurants host live music on their patios. ..The Colony location will offer it every evening between Tuesday and Saturday, starting at 7PM. The highly trained staff is efficient at preparing, delivering and serving their food to the local business community. Catering is a big part of their business, and serving working men and women in their place of work is something this crew is dedicated to.
 
The new location will be at 5300 State Hwy 121, The Colony 75056.
 
They officially open on Monday, March 7th!

I can't wait!! We were regular patrons when Randy White's was open! We've been waiting for a good BBQ place for Frisco!

My company is pretty close to the Hard Eight in Coppell. We eat there fairly often and they cater our VIP events. Here are my observations:
 
The BBQ itself is probably a 7 on a 1-10 scale. There's better stuff out there. Compared to Dickies(4-5) or Spring creek (5-6) a solid 7 is pretty good, but there's better, if you go look for it. One strength is the variety of the stuff coming out of the pit. Brisket, robs, turkey, chicken, sausage, etc... If it's meat, there's a good chance they have it. It'd be really nice if they offered barbecued game as well.
 
The sides are lackluster, and expensive. I don't bother. If you want to pay a couple of dollars for a half cup of run-of-the-mill potato salad, be my guest. The free beans are good, mostly because they're free and beans are really hard to screw up. You have to add cilantro to them to do that.
 
Parking. Parking was the biggest reason I hated going to Hard Eight in Coppell. It wasn't uncommon to skip eating there because there was no spots left in their lot. Their neighbors like to tow restaurant patrons. If you did manage to find a spot during lunchtime, you ran a chance that someone would park illegally, blocking you in. This happened to my group three times -- once while entertaining a client. They've since expanded their lot, but it still full at lunchtime. Beware. Let's hope this new one has several hectares of parking.

@rking . Your scale seems to align with mines when it comes to BBQ. For me, it's more about atmosphere than it is so much as the Q. When we have guest from out of state, they always ask where's the best BBQ joint at. I usually either take them to Rudy's or 3 Stacks on Preston. I'm not saying they make the best BBQ but I think the food combined with the atmosphere is what they are looking for. Personally, when I just want a BBQ sandwich, I head on over to Home Depot on Eldorado and grab a Big Nasty at the Stutterin Pig. Talk about good.

I've been to the one in Coppell, and like what others have said, it is ok. I prefer being able to eat a variety of BBQ and try lots of different sides since some places have better brisket, chicken or ribs than others. I'm from NY so I haven't had good BBQ until I moved down here, but Hutchin's BBQ in Frisco offers a min all you can eat buffet for under $20. Includes all the meats, lots of southern sides to chose from, rolls and dessert (usually peach cobbler & banana pudding). Such a great deal if you're very hungry and don't want to spend a fortune on BBQ. It's located on Preston Rd near Main St (in the lot behind Popeye's & Golden Moon Chinese Restaurant).
